Ricotta and Blueberry Protein Power Crepes

These crepes are simple, nutritious and delicious! The perfect afternoon snack, they can be made in under 10 minutes! Best of all they are full of fiber, anti-oxidants and protein, keeping you fuller for longer.

 

Ingredients:

1 egg

1 tbsp of protein powder

1 tbsp of coconut milk

Vanilla extract

Pinch of stevia

Method:

  1. Fry in a non-stick pan and fill with 50g of ricotta cheese or coconut yoghurt (vegan option)
  2. Top with blueberries and cinnamon for improved blood sugar balance
