5-minute Vegan Cream of Mushroom Soup*

This soup is so easy and quick to make, it would be a pity to miss out on it. Perfect on a night when you don’t feel like spending hours in the kitchen!

All you need is a high power blender.

Ingredients:

  • 2 – 3 cups water
  • 2 cups mushrooms
  • 1/2 cup onion
  • 1 cup raw cashews (soaked for 15 – 20 minutes)
  • 1/2 avocado
  • 2 cloves garlic
  • 1/3 tablespoon organic thyme
  • 1/2 teaspoon pink himalayan salt
  • pinch of chili

Method:

Put all ingredients in a Vitamix or any high power blender, and blend until creamy and well combined (blend for 5 minutes if you would like it hot and steamy like me).

Garnish with diced mushrooms, parsley, or black pepper.

 

Hot tip:

If you are after a more distinct, richer flavour, sautee the garlic, onions and mushrooms with 1 tbsp olive oil for 3-5 minutes then blend all the ingredients.
