Banana pancake with mango and coconut yogurt

This is one of my easiest and quickest recipes. Only takes 5 minutes to make and it’s packed full of protein, fibre and good carbs.



Ingredients: (makes 2 pancakes)

Serving size: 1 pancake

  • 2 organic eggs
  • 1 banana
  • 1 tsp chia seeds
  • 4 drops stevia
  • Dash of ground cinnamon

Topping options: coconut yogurt, fresh mango, nuts/seeds, nut butter, coconut butter or berries.


  1. Slice banana, place in a bowl and mash with a fork.
  2. Add eggs, stevia, chia  and cinnamon and combine until smooth.
  3. Heat a non-stick skillet (you can spray it lightly with coconut oil) and pour in half of the mixture.
  4. Cook for approximately 2 minutes or until edges are separating from the skillet, and flip to cook for another 1-2 minutes. Repeat with the remaining pancake mix. 

Serve with a dollop of coconut yogurt and freshly cut mango. Dust with cinnamon.
