Breakfast in a Jar

This breakfast in a jar is simple to throw together. All you need is an old jar with a lid to make it an easy take-away option. You can mix all the ingredients together, or you can layer it and make it pretty like I have. The ingredients in my ‘breakfast in a jar’ are full of antioxidants, fibre, vitamins and good quality protein. It’s my go-to option if I know I’m going to be be rushed in the morning, I simply prepare it the night before.

Ingredients:

Layer 1: 1/4 cup frozen raspberries
Layer 2: 1/4 cup coconut yogurt or Greek yogurt (mixed with a tiny bit of vanilla protein powder)
Layer 3: 1/4 cup rolled oats or buckwheat
Layer 4: 1/4 cup frozen raspberries
Layer 5: 1/4 cup coconut yogurt or Greek yogurt
Layer 6: 1/4 cup frozen raspberries
Layer 7: 2 tbsp chia seeds
Top with fresh or frozen berries.

Dust with cinnamon or raw cacao powder!

Method:

Place each layer of ingredient in an old jar and when ready to eat mix through.
Can prepare in the evening and store in the fridge overnight.
