Healthy Aioli (Mayo)

Looking for a healthy alternative to mayo? Let me tell you a little secret, there is a healthy alternative to everything. Try this, it will blow your mind!


  • 1 large egg (room temperature)
  • 1 1/2 tbsp lemon juice
  • 1/2 tsp mustard powder
  • 1/2 cup light olive oil or avocado oil
  • 1 small garlic clove crushed
  • salt & pepper to taste


  1. In a hand blender or food processor combine egg, lemon juice, garlic and mustard powder until frothy.
  2. VERY SLOWLY little by little drizzle the oil in while still mixing on low speed. Sprinkle with dry parsley or coriander.

Variation: for plain mayo, omit the garlic.

For spicy mayo add cayenne pepper or chipotle powder.

  1. The first time I made the Healthy Aoli I substituted Dijon mustard for mustard powder and the aoli was excellent. This time I used the mustard powder and the aoli is much more liquid. I preferred the consistency of the first batch. Does using the Dijon mustard detract drastically from the healthy aspect?
