- 1 large egg (room temperature)
- 1 1/2 tbsp lemon juice
- 1/2 tsp mustard powder
- 1/2 cup light olive oil or avocado oil
- 1 small garlic clove crushed
- salt & pepper to taste
- In a hand blender or food processor combine egg, lemon juice, garlic and mustard powder until frothy.
- VERY SLOWLY little by little drizzle the oil in while still mixing on low speed. Sprinkle with dry parsley or coriander.
Variation: for plain mayo, omit the garlic.
For spicy mayo add cayenne pepper or chipotle powder.
