Lamington Bites with raspberry filling

This delicious Lamington bite recipe gluten free, dairy free, refined sugar free recipe and most importantly 100% guilt free. It is also suitable for vegetarians and vegans.

Not only are they super tasty but they’re also loaded with healthy fats, antioxidants and are full of beneficial soluble fibre that’s good for the gut. Both your tastebuds and your tummy will thank you for them!

 

Ingredients

(makes 12)

For the lamington balls

  • 1 cup almond meal
  • 1 tbsp tahini
  • ½ cup soaked cashews
  • ⅓ cup cacao
  • 1 tbsp psyllium husk
  • 6 dates
  • 1tsp cinnamon
  • 4 drops / 1 pinch of stevia
  • 2tbsp coconut oil

For the filling

  • 2tbsp chia seeds
  • ½ cup frozen berries
  • 1 tbsp water

Coating

  • 1 cup unsweetened shredded coconut

Method

  1. Soak the cashews for at least 20 minutes.
  2. Mix the berry filling ingredients and set aside.
  3. Place the lemington ingredients into a food processor and blend until well combined.
  4. Place the mixture the fridge/freezer for 10 minutes, so it’s easier to work with.  
  5. Scoop 1 heaped tablespoon of the mixture into your hand, create a hole in the middle and stuff with ½ tsp of raspberry filling.
  6. ‘Close up’ and roll in coconut.

    • Hey Victoria, we don’t provide the calorie breakdown for the recipes, but I happen to know that this one particularly would be about 100-120 calories per ball 🙂

  1. Hiya. Finding the mixture very crumbly. Does it need more time I’m the fridge? Also, trying to fill and close is a bit of a nightmare…spills straight out. What trick am I missing? Cheers!

    • Hi Vanessa, you can try to leave it in the fridge longer but all it should need is 10 minutes. Maybe add a little coconut oil to moisten the mixture.
      Form the Lamington balls first, make a hole in the middle about the size of your thumb, then add the filling. You only need 1/2 teaspoon of berry mix, otherwise it will spill out. When closing, just close up the gap.
