Ingredients:

Serves: 4

  • 300g minced beef, cooked
  • 3 cups kale, chopped
  • 3 tomatoes, diced
  • ½ cup coriander, chopped
  • 1 cup jalapeños
  • 2 cups mozzarella
  • 1 cup guacamole (1 avocado, ½ lime juice, pinch of salt)
  • 8 iceberg lettuce cups (2x person)
  • extra lime, juiced
  • Salt and pepper

Method:

  1. Combine guacamole ingredients in a bowl, set aside.
  2. Fill lettuce cups with desired filling. Top with guacamole lemon juice, salt and pepper to taste
