Quick ‘n Easy Protein Pancakes

Healthy alternative to traditional pancakes! You can serve them any way you like, I stacked them up and smeared nut butter in between the pancakes, coated with coconut flakes and served with fresh blueberries. Absolutely YUM!

Ingredients:

(makes 10, serving size 2 pancakes)

2/3 cups oats flour*

1 mashed banana

1 egg + 1 white

1.5 scoop of vanilla WPI (protein powder)

1/3 cup light coconut milk

dash cinnamon

pinch salt

1/2 tsp baking soda

option: add 1/3 cup frozen blueberries to the batter

 Method:

1. In a bowl, mix dry ingredients well, then combine it with the wet ingredients.

2. Alternatively you can put all ingredients in a blender like I did!

Serve with fresh berries, extra coconut milk or 1 tsp maple syrup.

*Oat flour is just blended oats. You can blend oats in a high performance blender.
