- 1 cup (130g) of muesli
- 1 scoop (30g) vanilla protein
- 1 tbsp psyllium husk
- 1 vanilla pod scraped
- 1 tsp ground cinnamon
- 1 tsp slippery elm powder
- 2 cups of frozen berries, thawed (300g) 2 cups diced
- 1 large egg
- 1 cup light coconut milk
- 1 tsp or 4-5 drops of stevia
- Heat oven to 160C.
- Lightly grease 3 small ovenproof bowls with coconut oil.
- Combine muesli, spices and the berries in a small bowl.
- In a separate bowl whisk egg then mix in the coconut milk.
