- 1 medium head cauliflower
- 1-2 fresh red chillies, diced & deseeded
- 2 garlic cloves, crushed
- 3-4 spring onions, diced
- 2 tbsp ginger, grated
- 1 tablespoon soy /tamari/ or coconut amino sauce
- 3 tbsp shredded coconut
- 1 tablespoon ghee or coconut oil
- ½ teaspoon of turmeric
- Salt & pepper to taste
Turmeric and Coconut Cauliflower Rice Method:
- In a food processor, process the cauliflower until it resembles rice consistency.
- Heat the oil in large pan or wok and saute the garlic, chilli and ginger for a couple of minutes.
- Add cauliflower, shredded coconut and the spices and saute for 20 minutes on low to medium heat, stirring occasionally.
- At the end toss in the spring onion and serve immediately.
